Burger

Author Notes: There are perfect burgers made of beef, salt, and pepper. This is not one of those burgers. And it takes not a little, but a lot more effort

Makes 6 burgers

For the burger:

1 1/2teaspoons cumin seeds
3tablespoons extra-virgin olive oil, plus more for grilling
1/2cup diced shallots
1tablespoon minced garlic
1tablespoon thyme leaves
2chiles de arbol, thinly sliced on the bias
2pounds ground pork
1/4pound fresh Mexican chorizo, casing removed
3ounces applewood-smoked bacon, finely diced
2tablespoons chopped flat-leaf parsley
6slices Manchego cheese
6brioche buns or other good burger buns
Aioli (recipe follows)
Romesco (recipe follows)

Ingredients

2 cups flour
2 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
3 Tbsp. sugar
2 eggs
3 cups buttermilk
4 Tbsp. butter, melted

AMAZING BUTTERMILK SYRUP

½ cup butter
¾ cup sugar
½ cup buttermilk
1 tsp. baking soda
1 tsp. vanilla

Instructions

In a large bowl, sift flour baking powder, baking soda, salt and sugar together.Add eggs, buttermilk and melted butter. Whisk until well combined.Cook on skillet or griddle until golden brown on both sides.

To make syrup

Combine butter, sugar and buttermilk in a medium saucepan over medium heat until sugar completely dissolves. Then remove from heat and add baking soda and vanilla. Stir to combine. Syrup will foam up, but that is part of what makes it SO incredible. Don’t be alarmed by that...

¾ Cup Sugar
1½ Sticks (3/4 Cup) Land O’Lakes Unsalted Butter
3 Cups Scalded Milk* instructions below
1 Cup Potato Flakes
1 Tablespoon Salt
4 Eggs
1 Tablespoon Instant Yeast or 2 Tablespoons Regular Yeast.

We use instant
7 Cups Flour*
1/3 cup additional butter, softened

Instructions

Heat a medium sauce pan over medium heat and add the milk. Cook until the edges begin to foam and froth, but do not allow it to boil. There will be a little layer of the milk “skin” on top. Remove from heat and add the sugar, butter, potato flakes and salt. Stir thoroughly and allow to cool to luke warm.Add the yeast, stir and then add the eggs, stirring until they are mixed in.Place the flour in a large bowl. Pour the milk mixture in and stir until the dough has come together, but is still soft...
